Adding to this issue, it seems that if I add an entry to a catalogue then switch to German and translate the title, save then switch to French I find the title is set to the German string I just edited (rather than the default English). There is also a small typo in the admin page title (see screenshot).

i.e. when there are more than 2 languages on a site, the fallback for a missing content translation isn't necessary the site's default language, it may be any undetermined language.
I'm not sure we specified the behaviour, I'll have to think about that. I probably agree with you.

This is an issue on the language pack apparently for that string, the tracker isn't the right place to resolve - needs to be filed as an issue on Transifex on the FR translation. I don't have the capacity to get intimately involved in any individual translations myself.
